Heat exchangers for bakeries

Exhaust heat recovery with a — heat exchanger cuts your operating costs and at the same time protects the environment.

Using an exhaust heat exchanger specially developed for bakeries, it is possible to connect several ovens to one exhaust heat exchanger using a single chimney.

Until a few years ago it was usual to construct a separate chimney for each oven which had to provide negative pressure of 20 Pa to the oven.. This meant that each oven had to be fitted with its own exhaust heat exchanger, which increased the costs of investment to an unacceptable level that outweighed the cost benefit.

This heat exchanger allows the exhaust gases from up to four ovens to be removed via a single chimney (500 kW maximum total output). The negative pressure required is provided using an electronically controlled suction draught device at the chimney mouth.

The advantages of an exhaust heat exchanger with multiple connections:

  • Easy cleaning thanks to enlarged access
  • Integrated bypass flap prevents overheating
  • Rapid investment payback thanks to multiple connections
  • Vapour and exhaust gas need not be separated
  • Negative pressure can be adjusted to within +/-1 Pa and can be varied depending on requirements or on the product.
  • No more fluctuations in draught caused by weather conditions.
  • The suction draught ventilator switches off when the ovens are switched off and the draught ceases, meaning that the ovens cool down 30°-40° less, resulting in subsequent shorter heating-up times
  • Suitable for oil and gas-fired ovens as well as for solid fuels.
  • Exhaust temperatures approximately 150° C lower
